SHRIMP & CRAWFISH PASTA

This one comes to us from our next door neighbor a lifelong Louisiana
boy prior to moving to Texas.  You can adjust the heat on it to your
liking, but be forewarned this one is rich, rich, rich.  Have a medic
standing by.

Ingredients:

1 pound of shrimp, peeled and deveined

1 pound of crawfish tails

1 large bag of egg noodles

two sticks of butter

1 red bell pepper, chopped fine

1 large onion, chopped fine

Two tbsp. chopped garlic

1 pint heavy whipping cream

Tony Chachere cajun seasoning, to taste

2 cups shredded cheddar cheese

Bring water to boil and cook egg noodles according to package directions.  Set aside.  Saute bell pepper and onion in two sticks of butter for about 5 minutes, until tender.  Add heavy whipping cream, crawfish, shrimp, garlic and Tony Chachere seasoning.  Cook for 5-10 minutes, until shrimp are pink.

Preheat over to 350.  Transfer cooked noodles into 13×9 glass baking pan.  Add 1 cup of cheddar cheese and mix.  Add seafood mix on top of noodle and cheese mixture and stir until well mixed.  Top with remaining cup of cheddar cheese.  Cover with aluminum foil and cook for thirty minutes.  Remove foil for last five minutes and cook until cheese is nice and melted.

Serve with a nice salad and French bread, and stay away from cholesterol tests and scales for the next 24 hours.
