This is a great school night casserole that doesn’t take long to prepare and is sure to please the whole family!
Ingredients:
1 lb. ground chuck hamburger meat
1 medium onion chopped fine
1 can whole kernel corn, drained
1 can black beans, rinsed and drained
1 can diced tomatoes, not drained
1 package taco seasoning mix
1 cup uncooked rice
2 cups water
1 cup shredded cheddar cheese
Directions:
Heat 2 cups water to a rolling boil. Add 1 cup uncooked rice. Reduce heat to low, cover and cook for 15 minutes.
While the rice is cooking, brown hamburger meat and onion in large skillet. Drain fat, then add corn, black beans, tomatoes and taco seasoning. Simmer until rice is finished cooking.
Preheat oven to 350. Combine rice and meat/vegetable mixture to 13×9 glass dish. Top with cheddar cheese. Cook 20-30 minutes or until cheese is nice and bubbly. Top with sour cream!
You can also subsitute egg noodles instead of rice if you want to have a different variation of this family-pleasing favorite.
