You don’t have to be Popeye to like this tasty side dish!
Ingredients:
3 packages frozen chopped spinach
4 tbsp. butter
2 tbsp. flour
2 tbsp. chopped onion
1/2 cup evaporated milk
1/2 cup vegetable liquor
3/4 tsp. celery salt
1 tbsp. minced garlic
8 oz. Velveeta, cubed
1 chopped jalapeno
1/2 tsp. red pepper
salt and pepper to taste
Directions:
Cook spinach according to directions on package. Drain and save 1/2 cup of liquor.
Melt butter in saucepan over low heat. Add flour stirring until smooth. Add onion and cook until soft, then add spinach liquor slowly, stirring constantly. Cook until smooth and thick.
Add seasonings and cubed Velveeta. Stir until the cheese is melted. Add cooked spinach and pour into a serving dish.
