STUFFED BELL PEPPERS

Delicious as a side dish or make a meal out of it by themselves!

Ingredients:

6 bell peppers

1 cup cooked rice

1 lb. ground beef

1 onion, chopped

1 can Mexicorn, drained

1 tbsp. chili powder

2 small cans tomato sauce

1 cup grated shredded cheddar cheese

Directions:

Preheat oven to 350.

Remove tops, and seeds from bell peppers, and set upright in large baking pan with 1/2 cup water. 

Brown ground beef and onion.  Drain fat.

Combine rice, ground beef, Mexicorn, tomato sauce and chili powder.  Once thoroughly mixed together, spoon mixture into bell peppers and top with cheddar cheese.

Cover with aluminum foil and bake for 40-45 minutes, removing foil the last 5 minutes.
