CHEESY POTATO AND HAM CASSEROLE

Ingredients:

6 medium potatoes – peeled and thinly sliced

2 large onions – peeled and thinly sliced

4 hard boiled eggs – chopped

1/2 cup of grated cheddar cheese

1/2 cup cooked Gluten free ham -chopped

1 cup milk

1/2 teaspoon paprika

1/2 cup roughly chopped bell pepper

Black pepper to taste

Directions:

Grease an oven proof dish with olive oil

Place half of the potatoes and half of the onions slices in layers over base of of dish

Sprinkle with black pepper

Spread cheese, ham, eggs and bell pepper over the surface of potatoes and onion slices

Pour half the milk over the top.

Place the rest of the sliced potatoes and onions over the top.

The pour over the rest of the milk

Sprinkle with paprika and black pepper

Bake at 180 C / for 45 minutes or until potatoes are cooked through and tender.

Serves 4 to 6

    People usually add paprika just for coloring. I’ve never found it adds much in the way of taste, but others may disagree.

    If you want some color AND taste, change the paprika to cayenne pepper. Just don’t use too much.
