This is a wonderful dish to serve on a special occasion!
Ingredients:
6 boneless chicken breasts
1 onion, chopped
2 stalks celery, chopped
1 green bell pepper, chopped
3 tbsp. butter
3 tbsp. lemon juice
1/2 lb. lump crab meat
1/2 cup herb-seasoned stuffing mix
2 tbsp. flour
1/2 tsp. paprika
1/2 tsp. salt
1/2 tsp. pepper
2 tbsp. melted butter
1 envelope hollandaise sauce mix
3/4 cup milk
1/2 cup shredded Swiss cheese
Directions:
Pound chicken to flatten and sprinkle with salt and pepper.
Melt butter in pan and saute onion, celery and bell pepper until tender.
Remove from heat and add lemon juice, crab meat and stuffing mix, tossing gently.
Divide mixture evenly among chicken breasts. Roll up and secure with toothpicks.
Combine flour and paprika and coat chicken.
Place in baking dish and drizzle with 2 tbsp. melted butter.
Bake, uncovered, at 350 for an hour.
Transfer to platter.
Blend sauce mix and milk in saucepan and cook until thick and then add Swiss cheese and cook until melted.
Drizzle sauce over chicken.
