MACARONI AND CHEESE

Gluten free pasta comes in a variety of shapes. Experiment to find your favorite for this dish. The trick to gluten free pasta is not to overcook or it will break up and become mush. Serve this flavorsome meal with  a green salad.

1 cup of gluten free pasta
1 tablespoon butter
2 cups milk
1 teaspoon mustard
1 tablespoon gluten free rice flour
1/2 cup matured cheddar cheese
Ground pepper to taste

1. Cooked pasta according to instructions
2. Over low heat In a small saucepan slowly melt butter, then stir in flour
3. Whisk in the milk
4. Turn the heat up to medium and cook. Stir occasionally until it just comes to the boil
And thickens slightly
5. Stir in mustard, cheese and pepper
6. Stir continuously until smooth and cheese is melted
7. Remove from heat and pour over drained pasta
8. Stir gently until cheese mix and pasta is roughly combined
9. Pour into oven proof dish and place in pre-heated hot oven until top is slightly browned.
