Ingredients:
3 large sweet onions, chopped
1/2 cup butter, divided in half
2 eggs
3/4 cup Half and Half
2 cups grated Swiss cheese
1 cup crushed saltine crackers
Salt and pepper to taste
Directions:
Preheat oven to 350.
In large skillet, melt 1/4 cup of butter and saute onions until tender, about 5 minutes.
Put half of the onion mixture in a greased 9×13 baking pan.
Sprinkle one cup of cheese and half the crackers on top of the onions.
Pour the other half of onions on top of that, and then the remainder of cheese on top of the onions.
Beat eggs with half and half, salt and pepper and pour over the onions.
In a small skillet, melt the other 1/4 cup of butter and add the remainder of the crushed crackers to the skillet and lightly brown over medium heat.
Sprinkle the cracker mixture over the cheese and onions.
Bake for 25-30 minutes.
