no fat – no glucose – no cholesterol – no gluten
2 teaspoons gelatin
½ cup water
1 cup boiling water
1/3 cup sugar
¼ cup lime juice
¼ cup grated lime peel
1 cup frozen berries
1 cup diced peaches
1. In a medium bowl sprinkle in gelatin over cold water
2. Let stand for 5 minutes
3. Stir in boiling water
4. Add sugar, lime juice and peel
5. Stir until gelatin is completely dissolved
6. Chill until slightly thickened
7. Gentle fold in blueberries and peaches into gelatin mix
8. Spoon into individual serving dishes or wine glasses
9. Chill until firm
Serves 4 – 6
