Ingredients:
2 packages of chopped frozen spinach
1 14 oz. can artichoke hearts, drained and chopped
1 onion, chopped fine
1 stick butter
8 oz. cream cheese
8 oz. shredded monterey jack cheese
8 oz. shredded mozzarella cheese
1/2 cup grated parmesan cheese
1/2 cup heavy whipping cream
1/2 tsp. salt
1/2 tsp. pepper
Directions:
Cook spinach according to package directions. Drain and put aside.
Saute onion in butter until translucent, about five minutes.
Beat whipping cream and cream cheese on medium speed until creamy.
Combine spinach, artichoke hearts, sauteed onions, cream cheese/whip cream mixture, monterey jack and mozzarella cheeses, salt and pepper.
Let this mixture chill for 2-3 hours.
Spread in a microwave safe serving dish and top with grated parmesan cheese. Microwave for five minutes.
Serve with crackers, tortilla chips or toasted bagettes.
