Ingredients:
1/2 lb. grated Swiss cheese
1/2 lb. grated Monterey Jack cheese
1/2 lb. grated sharp cheddar cheese
1 cup jalapenos, chopped and seeded
6 eggs
1 tsp. minced garlic
1/2 tsp. salt
Directions:
Preheat oven to 300. Coat 9×13 casserole dish with non-stick spray.
Spread the chopped jalapenos on the bottom of the casserole dish.
Layer the cheeses evenly on top of the jalapenos.
Beat eggs, garlic and salt together and pour over jalapeno cheese mixture.
Cover with aluminum foil and bake for 45 minutes.
Allow to fully cool (about 15 minutes) before slicing into squares.
