Ingredients:
1 lb. tilapia filets
1/2 cup corn meal
1/2 cup flour
1 tbsp. salt
1 tbsp. flour
Directions:
Combine corn meal, flour, salt and pepper in large bowl.
Wet fish with water and dredge through the flour/corn meal mixture.
Heat skillet on medium high with a couple tablespoons of extra virgin olive oil for a
couple minutes before adding filets to it. You want to make sure you
hear the sizzle when you lay the fish on it.
Cook the fish for three minutes on each side until golden.
If you don’t like tartar sauce with your fish, try a roasted red pepper/ tomato/sweet onion dip – so fresh!
