SHEPHERDS PIE

1 large onion roughly chopped
2 tablespoons oil
½ pound minced beef
½ cup cooked peas
½ cup cooked brown rice
1 cup grated carrots
1 small grated potato
¾ cup water
1 tablespoon Gluten Free gravy mix
1 tablespoon Gluten Free flour
2 cups mashed potato (use Gluten Free instant or real potatoes)
Teaspoon butter

1. Place oil in a large saucepan with the oil. Stir and allow onion to brown.

2. Add mince and break up with spoon while stirring through onion.

3. When mince begins to brown, add carrots, peas and potato. Stir through

4. In a small jug, make a paste using a little of the water, the gravy mix and the corn flour.

5. Stir in the rest of the water.

6. Pour liquid into mince and vegetable mixture and reduce heat.

7. Salt and pepper to taste

8. Prepare a deep baking dish by lightly brushing sides with oil

9. Pour the meat mixture into baking dish. Mixture should be thick but not dry.

10. If you used cooked potatoes, mash in the butter.

11. Spread mash potato over the top of the meat using a fork.

12. Sprinkle with a small amount of grated cheese or brush with melted butter.

13. Cook in a hot oven until potato is a crispy brown.
