CHICKEN FRIED STEAK & CREAM GRAVY

Ingredients for chicken fried steak:

4 cube steaks
1 1/2 – 2 cups flour
1 egg
1 cup milk
1 tbsp. salt
1 tbsp. pepper
vegetable oil

Directions:

Tenderize meat by pounding with meat mallot on cooking board until about 1/4 – 1/3″ thick.

Salt and pepper each side of the meat.

In one large bowl, mix flour, salt and pepper.

In another bowl, beat egg and add 1 cup milk, mixing thoroughly.

Heat large skillet on medium for about 2 minutes, then add 2-3 tbsp. vegetable oil.  Your oil needs to be good and hot before adding the meat.  You will probably need to add oil after each batch of steaks.

Dredge steak in flour, salt and pepper mixture on both sides.  Then dip in egg/milk mixture.  Dip again in flour mixture.

Fry in skillet approximately 4 minutes on each side until golden brown.  Drain on paper towels.

Cream gravy ingredients:

Drippings from steak
3 tbsp. flour
1 1/2 cups milk

Combine drippings and flour until well mixed on medium heat.  Gradually add milk and stir with whisk until nice and thick.

Smother on top of the steak.
