This is a great dish to serve for Sunday dinner! The trick – start on Saturday night…
Ingredients:
3-4 lb. pork roast or pork tenderloin
1 12 oz. can pineapple concentrate
1/2 cup brown sugar
1/4 cup soy sauce
1 tbsp. ginger
1 20 oz. can crushed pineapple
Here’s the Saturday night part:
Place the pork in a large pan and cover with brown sugar, ginger, soy sauce and pineapple concentrate. Cover with plastic wrap and let marinate overnight.
Here’s the Sunday morning part:
Transfer into your Crock Pot and let it cook on low for eight hours. Towards the last hour of cooking, add the can of crushed pineapple.
Serving suggestions:
Serve over hot steamed rice, or with a baked sweet potato and fresh dinner salad.
