For
those who like a sweet fruity taste, this is a deliciously sweeter variation to the recipe for COCONUT MACAROONS
You may need a few trial bakes to get the
sweetness just right for you, but what a yummy excuse to have some on
hand for unexpected visitors.
4 large egg whites
½ cup castor sugar (super fine)
1 ¾ cups desiccated coconut (finely shredded)
2 tablespoons of apricot jam/jelly
Beat sugar and egg whites with high speed mixer until stiff and forms peaks
Add spoonfuls of coconut and apricot jam/jelly alternately
Stir very slowly between additions until well mixed
Place small spoonfuls of mixture on oven proof trays
For an even sweeter taste, drop a tiny amount of jam/jelly on the top each before baking.
Cook in a moderate oven for 20 – 25 minutes
Allow to cool on the tray
