½ cup rice flour
1 ¾ cups pure icing sugar
1 ½ cups almond meal
2 tablespoons poppy seeds
1 large orange, rind finely grated
5 egg whites
¾ cup butter, melted and cooled
1. Preheat oven to 200C /400F
2. Grease 10 friand pans and place on baking tray or use cup cake papers
3. Sift flour and icing sugar together into a large mixing bowl. Stir in almond meal, poppy seeds and orange rind
4. Use an electric beater to whisk egg whites until frothy but not firm
5. Fold beaten egg whites through flour mixture
6. Add melted butter and stir in until all ingredients are combined
7. Spoon mixture into prepared pans to ¾ full
8. Bake for 25 minutes or lightly browned
9. Remove from oven and let cool for 10 minutes
10. Lightly dust tops with sifted pure icing sugar or basted with melted marmalade
