WHAT’S FOR DINNER TONIGHT? HOW ABOUT CREAMY SPINACH AND PEPPER TORTELLINI

Ingredients:

1 20 oz. package triple cheese tortellini
2 slices bacon
1/2 cup chopped onion
1/2 cup chopped red bell pepper
1 tbsp. minced garlic
1 10 oz. package chopped spinach, thawed
1 tbsp. basil
1/2 tsp. salt
1/2 tsp. red pepper flakes
1 cup half ‘n half
1/4 cup grated parmesan cheese

Directions:

Cook tortellini according to package. Drain and keep warm.

In a skillet over medium high heat, cook bacon until crisp, remove and chop. Add onion, garlic and red bell pepper to bacon drippings and cook until tender, about 5 minutes.

Add spinach, chopped bacon, basil, salt and red pepper flakes and cook for five minutes.

Stir in half ‘n half and parmesan cheese and cook until mixture comes just to a boil, then reduce heat to low and stir in cooked tortellini. Cook an additional five minutes or until heated through.
