MAMMA’S CORNBREAD DRESSING

Mommas Dressing

We all know dressing is deeply personal. People have strong opinions about it: cornbread or white bread; to sage or not to sage; oysters, duck, chicken or meatless? To stuff or not to stuff the bird? Well, here is a family recipe that has made my husband happy his whole life, and is now finally in written form. If you like it, you can thank Myrtle Winder.

Ingredients:

1 9”x13” pan of cornbread
2 lbs. chicken legs or thighs
4 stalks of celery, chopped
1 bunch of green onions, chopped
1 yellow onion, chopped
1 can cream of celery soup
1 can cream of chicken soup
½ soup can of milk
1 tbsp. sage
1 tbsp. poultry seasoning
1 tbsp. thyme
1 tbsp. vinegar (the secret ingredient!)

Directions:

Cook the cornbread the day before.

In a large pot, boil chicken (with just enough water to cover the meat). You can also add an onion to flavor the stock. Boil for about 20 minutes. Remove chicken, let cool and then take the meat off the bones. Set aside. Reserve chicken broth (skim the fat off the top).

Saute vegetables in 2-3 tbsp. butter (or bacon drippings if you happen to have them!) for about five minutes until tender.

Preheat oven to 375.

In a large mixing bowl, crumble cornbread and add chicken meat, vegetables, soups, milk, 4 cups of reserved chicken broth, seasonings and vinegar. You can always add more seasonings to your taste or broth to achieve your desired consistency after this is completely mixed. (I like it better moist, especially since you will lose some of the moisture after it is cooked.)

Cook for about 30 minutes or until the dressing gets crispy on the sides.
