MY GRANNY’S FAMOUS DIRTY RICE

Granny is a great southern cook raised in Louisiana and along the
Mississippi Gulf Coast.  Her recipe is lip-smacking good and it is
definitely the real deal.

Ingredients:

2 cups raw rice, cooked in 4 cups of water

1 lb. Jimmy Dean sausage

1 lb. chicken livers

1 stick butter

1 medium onion, chopped fine

1 green bell pepper, chopped fine

3 stalks celery, chopped fine

1 can chicken broth

2 tbsp. chopped parsley

Seasonings:  salt, pepper, garlic – to taste

Cook 2 cups rice and set aside.

Saute onion, bell pepper and celery in a stick of butter until tender, about 5 minutes.  Set aside

Brown chicken livers and Jimmy Dean Sausage until cooked thoroughly, seasoning with garlic, salt, pepper and parsley.  Drain fat.

In a deep 13×9 pan, add rice, vegetables, chicken livers and sausage together and mix well.  Pour one can of chicken broth over this mixture and stir until moistened.  Cook at 350 for about 20 minutes, until evenly heated through.

This recipe is better than any dirty rice recipe I’ve had at any restaurant.  The secret ingredient is the chicken livers.

    Stacey, how much is a stick of butter in the States? Here in Oz, a stick of butter would be 8 oz
